About Brévant
Brévant is a selective guide to dining across Canada. In each city, we choose only three restaurants.
Rather than attempting to catalogue every good restaurant in a city, Brévant makes a smaller and more demanding commitment: three names, and no more. Narrowing a city to three forces a real choice, and that choice is the whole value of the guide. There is deliberately no ranking among them — they are simply the three Brévant selections for that city, listed as equals.
Selections weigh the cooking above all — its originality, its consistency over time, its sense of the place it is in — alongside the whole of the experience a restaurant offers. A long-standing institution may sit beside a room that opened last year; neither the age of a place nor the size of its reputation settles anything. What a meal costs, how the dining room is decorated, and how many awards a kitchen has gathered are not the point. Whether it is worth knowing is.
The selections are not ranked, and they are not scored. There is no points system and no formula, because a number would only flatten the thing it claims to measure. Inclusion itself is the distinction.
Restaurants cannot buy their way into Brévant. Nothing here is paid, sponsored, or arranged, and no restaurant is told in advance that it has been chosen. The guide is revisited and revised over time — restaurants change, new rooms open, others close, and a city's three will change with them. What appears here reflects our considered choices for now, not a list fixed in place.
